chicken fajitas in the Air Fryer

Ingredients:

  • 1 pound (about 450g) boneless, skinless chicken breasts, sliced into thin strips
  • 1 red bell pepper, thinly sliced
  • 1 green bell pepper, thinly sliced
  • 1 yellow onion, thinly sliced
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon dried oregano
  • Salt and black pepper to taste
  • Juice of 1 lime
  • 8 small flour tortillas
  • Optional toppings: shredded cheese, sour cream, salsa, guacamole, chopped cilantro

Instructions:

  1. Marinate Chicken: In a bowl, combine the sliced chicken breast strips with olive oil, minced garlic, chili powder, ground cumin, smoked paprika, dried oregano, salt, black pepper, and lime juice. Mix well to ensure the chicken is coated evenly. Let the chicken marinate for at least 30 minutes in the refrigerator.
  2. Preheat Air Fryer: Preheat your air fryer to 400°F (200°C) for about 5 minutes.
  3. Prepare Vegetables: While the chicken is marinating, thinly slice the red bell pepper, green bell pepper, and yellow onion.
  4. Cook Chicken and Vegetables: Place the marinated chicken strips, sliced bell peppers, and onions in the air fryer basket. You may need to cook in batches if your air fryer is small to avoid overcrowding.
  5. Air Fry: Air fry the chicken and vegetables at 400°F (200°C) for 12-15 minutes, shaking the basket halfway through cooking, until the chicken is cooked through and the vegetables are tender and slightly charred.
  6. Warm Tortillas: While the chicken and vegetables are cooking, warm the flour tortillas in the microwave or oven according to the package instructions.
  7. Assemble Fajitas: Once the chicken and vegetables are cooked, remove them from the air fryer basket. Spoon the chicken and vegetables onto the warmed flour tortillas.
  8. Add Toppings: Top the chicken and vegetables with your desired toppings such as shredded cheese, sour cream, salsa, guacamole, and chopped cilantro.
  9. Serve: Fold the tortillas over the filling to create fajitas and serve immediately.
