Veal Piccata

Veal Piccata is a classic Italian dish featuring tender veal cutlets in a lemony, buttery caper sauce. Here’s a recipe for you to enjoy:

Ingredients:

For the Veal:

  • 4 veal cutlets (about 1/4 inch thick)
  • Salt and black pepper to taste
  • 1/2 cup all-purpose flour, for dredging
  • 2 tablespoons olive oil
  • 4 tablespoons unsalted butter

For the Piccata Sauce:

  • 1/2 cup dry white wine
  • 1/4 cup fresh lemon juice (about 2 lemons)
  • 1/4 cup chicken broth
  • 1/4 cup capers, drained
  • 2 tablespoons fresh parsley, chopped

Instructions:

  1. Prepare the Veal:
    • Season the veal cutlets with salt and black pepper on both sides.
  2. Dredge in Flour:
    • Dredge the veal cutlets in flour, shaking off any excess.
  3. Cook Veal:
    • In a large skillet, heat olive oil and 2 tablespoons of butter over medium-high heat. Once the butter is melted and the pan is hot, add the veal cutlets. Cook for 2-3 minutes per side, or until golden brown. Remove the veal from the pan and set aside.
  4. Make the Piccata Sauce:
    • In the same skillet, add the white wine, scraping up any browned bits from the bottom of the pan. Allow the wine to reduce for a couple of minutes.
  5. Add Lemon Juice and Broth:
    • Stir in the fresh lemon juice and chicken broth. Bring the mixture to a simmer.
  6. Incorporate Capers and Parsley:
    • Add the capers and chopped parsley to the sauce. Stir to combine.
  7. Finish the Sauce:
    • Reduce the heat to low, and add the remaining 2 tablespoons of butter to the sauce, stirring until the butter is melted and the sauce has a smooth consistency.
  8. Return Veal to the Pan:
    • Return the cooked veal cutlets to the skillet, coating them in the piccata sauce. Allow the veal to heat through for a couple of minutes.
  9. Serve:
    • Plate the veal cutlets, spoon the piccata sauce over them, and garnish with additional chopped parsley if desired.
  10. Enjoy:
