Air Fryer Ham and Egg Cups

Ingredients:

  • 6 slices of ham (regular or turkey ham)
  • 6 large eggs
  • Salt and pepper, to taste
  • Cooking spray or oil (for greasing the muffin tin)
  • Optional: shredded cheese, chopped vegetables (such as bell peppers or spinach), chopped herbs (like chives or parsley)

Instructions:

  1. Preheat Air Fryer: Preheat your air fryer to 350°F (175°C) for about 5 minutes.
  2. Prepare Muffin Tin:
    • Lightly grease the cups of a muffin tin with cooking spray or oil.
  3. Line Cups with Ham:
    • Take a slice of ham and press it into one cup of the muffin tin, creating a small cup or nest. Make sure the ham covers the bottom and sides of the cup to hold the egg.
  4. Crack Eggs into Ham Cups:
    • Crack one egg into each ham-lined cup.
  5. Season and Add Extras:
    • Season each egg with a pinch of salt and pepper.
    • Optionally, add toppings like shredded cheese, chopped vegetables, or herbs on top of the eggs.
  6. Air Fry:
    • Place the muffin tin in the preheated air fryer basket.
    • Air fry the ham and egg breakfast cups at 350°F (175°C) for 10-12 minutes, or until the eggs are cooked to your desired doneness. For runny yolks, aim for about 10 minutes, while fully cooked yolks may take closer to 12 minutes.
  7. Serve Warm:
    • Once cooked, carefully remove the breakfast cups from the air fryer.
    • Use a spatula or spoon to gently lift the cups out of the muffin tin.
    • Serve the warm ham and egg breakfast cups immediately as a delicious and protein-packed breakfast or brunch option.
