Sticky toffee pudding

Sticky Toffee Pudding is a classic British dessert known for its rich, moist texture and sweet toffee sauce. Here’s a recipe for making Sticky Toffee Pudding:

Ingredients:

For the Pudding:

  • 1 cup (200g) chopped dates
  • 1 teaspoon baking soda
  • 1 cup (240ml) boiling water
  • 1/4 cup (60g) unsalted butter, softened
  • 3/4 cup (150g) brown sugar
  • 2 large eggs
  • 1 3/4 cups (220g) all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract

For the Toffee Sauce:

  • 1/2 cup (115g) unsalted butter
  • 1 cup (200g) brown sugar
  • 1 cup (240ml) heavy cream
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions:

  1. Preheat the Oven:
    • Preheat your oven to 350°F (180°C). Grease a baking dish or individual pudding molds.
  2. Prepare the Dates:
    • In a bowl, combine chopped dates and baking soda. Pour boiling water over the dates and let them sit for about 10-15 minutes until softened.
  3. Make the Pudding Batter:
    • In a separate bowl, cream together softened butter and brown sugar. Add eggs one at a time, beating well after each addition.
    • In another bowl, whisk together flour, baking powder, and salt.
    • Gradually add the dry ingredients to the butter-sugar mixture, mixing until just combined.
    • Stir in the soaked dates and vanilla extract.
  4. Bake:
    • Pour the batter into the prepared baking dish or individual molds.
    • Bake in the preheated oven for 25-30 minutes or until a toothpick inserted into the center comes out clean.
  5. Make the Toffee Sauce:
    • While the pudding is baking, prepare the toffee sauce. In a saucepan, melt butter over medium heat. Add brown sugar, heavy cream, vanilla extract, and a pinch of salt.
    • Bring the mixture to a gentle simmer, stirring continuously, and let it cook for 2-3 minutes until the sauce thickens slightly.
  6. Serve:
    • Once the pudding is out of the oven, poke holes in it with a skewer or fork.
    • Pour some of the warm toffee sauce over the pudding, allowing it to seep into the holes.
    • Serve the sticky toffee pudding warm, with extra toffee sauce drizzled over the top.
