Ingredients:

  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • Zest of 1 lemon
  • 1/4 cup fresh lemon juice
  • 1/2 cup fresh blueberries
  • Powdered sugar (optional, for dusting)

Instructions:

  1. Preheat Air Fryer: Preheat your air fryer to 320°F (160°C) for about 5 minutes.
  2. Prepare Cake Batter:
    • In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
    • In a separate large bowl, cream together the softened butter and granulated sugar until light and fluffy.
    • Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract, lemon zest, and lemon juice until well combined.
    • Gradually add the dry flour mixture to the wet ingredients, mixing until just combined. Do not overmix.
    • Gently fold in the fresh blueberries into the cake batter.
  3. Grease Pan and Pour Batter:
    • Lightly grease a round cake pan or a suitable air fryer-safe baking dish with butter or cooking spray.
    • Pour the prepared cake batter into the greased pan and spread it evenly.
  4. Air Fry Cake:
    • Place the cake pan in the preheated air fryer basket.
    • Air fry the lemon blueberry cake at 320°F (160°C) for 25-30 minutes or until a toothpick inserted into the center of the cake comes out clean.
  5. Cool and Serve:
    • Once cooked, carefully remove the cake from the air fryer and allow it to cool in the pan for a few minutes.
    • Transfer the cooled cake to a wire rack to cool completely.
    • Optionally, dust the top of the cake with powdered sugar before serving.
  6. Slice and Enjoy: Slice the air-fried lemon blueberry cake into servings and enjoy it as a delicious dessert or snack.

Note: Cooking times may vary slightly depending on the size and model of your air fryer. Adjust the cooking time accordingly and keep an eye on the cake towards the end of the baking process to avoid over-browning.

This lemon blueberry cake made in the air fryer is moist, flavorful, and perfect for any occasion. Enjoy!
