Ingredients:

  • 1 pound ground beef or ground turkey
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • 2 cloves garlic, minced

  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • 2 large potatoes, peeled and cubed
  • Olive oil
  • Wooden skewers, soaked in water for at least 30 minutes
  • Cooking spray or oil spray

Instructions:

  1. Preheat your air fryer to 375°F (190°C) for about 5 minutes.
  2. In a mixing bowl, combine the ground beef or turkey, breadcrumbs, grated Parmesan cheese, egg, minced garlic, dried oregano, dried basil, salt, and pepper. Mix well until all ingredients are evenly incorporated.
  3. Shape the meat mixture into small meatballs, about 1 inch in diameter.
  4. Thread the meatballs onto the soaked wooden skewers, alternating with cubed potatoes.
  5. Brush the skewers with olive oil to coat them lightly.
  6. Lightly coat the air fryer basket with cooking spray or oil spray.
  7. Place the skewers in the air fryer basket in a single layer, making sure they are not touching or overcrowded.
  8. Air fry the potato and meatball skewers at 375°F (190°C) for about 18-20 minutes, flipping the skewers halfway through cooking, until the meatballs are cooked through and the potatoes are tender and golden brown.
  9. Once done, carefully remove the skewers from the air fryer using tongs.
  10. Serve the potato and meatball skewers hot as a delicious and satisfying meal.
