Syn-Free Apple Crumble Cheesecake that’s suitable for Slimming World:

Ingredients:

For the Base:

  • 150g digestive biscuits (use a low-syn or syn-free version for Slimming World)
  • 50g butter, melted (or a low-calorie cooking spray for a syn-free option)

For the Cheesecake Filling:

  • 500g fat-free Greek yogurt
  • 200g quark
  • 2 tsp vanilla extract
  • 4 tbsp powdered sweetener (adjust to taste)
  • 3 gelatin leaves (soaked in cold water for 5 minutes and then melted in a tablespoon of hot water)

For the Apple Topping:

  • 4 apples, peeled, cored, and diced
  • 1 tbsp lemon juice
  • 2 tbsp water
  • 1 tsp ground cinnamon
  • Sweetener to taste

For the Crumble Topping:

  • 40g oats (toasted for a syn-free option or use your Healthy Extra B)
  • 20g sweetener
  • 1 tsp ground cinnamon

Instructions:

For the Base:

  1. Crush the digestive biscuits until they resemble fine crumbs.
  2. Mix the biscuit crumbs with melted butter until well combined.
  3. Press the mixture into the base of a cake tin to form the cheesecake crust.
  4. Place in the refrigerator to set while preparing the filling.

For the Cheesecake Filling:

  1. In a bowl, mix the fat-free Greek yogurt, quark, vanilla extract, and sweetener until smooth.
  2. Melt the soaked gelatin leaves in a tablespoon of hot water and then fold it into the yogurt mixture.
  3. Pour the filling over the biscuit base and smooth the top.
  4. Place it back in the refrigerator to set for at least 2-3 hours or overnight.

  1. In a saucepan, combine diced apples, lemon juice, water, ground cinnamon, and sweetener to taste.
  2. Cook over medium heat until the apples are soft and the mixture has thickened slightly.
  3. Allow the apple topping to cool completely before spreading it over the set cheesecake layer.

For the Crumble Topping:

  1. Toast the oats in a dry pan until golden brown for a syn-free option.
  2. Mix toasted oats with sweetener and ground cinnamon.
  3. Sprinkle the crumble mixture over the apple topping.

Serving:

  1. Carefully remove the cheesecake from the cake tin.
  2. Slice and serve chilled.
