Air Fried potato skins

Air-fried potato skins make for a delicious and crispy snack. Here’s a simple recipe for making Air Fried Potato Skins:

Ingredients:

  • 4 large russet potatoes
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • Shredded cheese (cheddar, mozzarella, or your choice)
  • Cooked and crumbled bacon
  • Sour cream (optional)
  • Chopped green onions or chives (optional)

Instructions:

  1. Preheat Air Fryer:
    • Preheat your air fryer to 400°F (200°C).
  2. Prepare Potatoes:
    • Wash and scrub the potatoes thoroughly. Pierce each potato with a fork a few times. This helps steam escape during the cooking process.
  3. Air Fry Potatoes:
    • Place the potatoes in the air fryer basket and cook for about 40-45 minutes, or until the potatoes are tender when pierced with a fork. The time may vary depending on the size of your potatoes and the air fryer model.
  4. Let Potatoes Cool:
    • Allow the potatoes to cool for a few minutes until they are safe to handle.
  5. Cut and Scoop:
    • Cut each potato in half lengthwise. Using a spoon, gently scoop out the insides, leaving about 1/4 inch of potato attached to the skin.
  6. Season and Oil:
    • Brush the inside and outside of each potato skin with olive oil. Sprinkle with salt and pepper to taste.
  7. Air Fry Again:
    • Place the potato skins back into the air fryer basket, skin side down. Air fry for about 8-10 minutes or until the edges are crispy and golden.
  8. Add Toppings:
    • Remove the potato skins from the air fryer. Sprinkle shredded cheese and bacon crumbles over each skin.
  9. Air Fry Once More:
    • Return the loaded potato skins to the air fryer and cook for an additional 2-3 minutes, or until the cheese is melted and bubbly.
  10. Serve:
    • Remove from the air fryer, let them cool for a minute, and then serve with optional toppings like sour cream, chopped green onions, or chives.
