Air fryer cheese and chive scones

Ingredients:

  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, cold and cubed
  • 1 cup shredded cheddar cheese
  • 2 tablespoons chopped fresh chives
  • 1/2 cup buttermilk (or milk with a splash of vinegar)
  • 1 large egg, beaten (for egg wash)
  • Additional shredded cheese and chives for topping (optional)

Instructions:

  1. Preheat Air Fryer: Preheat your air fryer to 375°F (190°C) for about 5 minutes.
  2. Prepare Scone Dough:
    • In a large mixing bowl, whisk together the flour, baking powder, baking soda, and salt.
    • Add the cold cubed butter to the flour mixture and use a pastry cutter or fork to cut the butter into the flour until it resembles coarse crumbs.
    • Stir in the shredded cheddar cheese and chopped fresh chives until evenly distributed.
  3. Form Scones:
    • Make a well in the center of the flour mixture and pour in the buttermilk.
    • Use a fork or spatula to gently mix until the dough comes together. Be careful not to overmix.
    • Turn the dough out onto a lightly floured surface and gently pat it into a circle about 1 inch thick.
    • Use a knife or pastry cutter to divide the dough into 8 equal wedges.
  4. Air Fry Scones:
    • Place the scones on a parchment paper-lined tray or in the air fryer basket, leaving some space between them for expansion.
    • Brush the tops of the scones with beaten egg for a golden finish.
    • Optionally, sprinkle additional shredded cheese and chopped chives on top of each scone for extra flavor.
  5. Air Fry:
    • Air fry the scones at 375°F (190°C) for 10-12 minutes or until they are golden brown and cooked through. The bottoms should also be lightly browned.
  6. Serve Warm:
    • Once cooked, remove the cheese and chive scones from the air fryer and let them cool slightly on a wire rack.
    • Serve the scones warm as a delicious breakfast or snack. They are best enjoyed fresh but can be stored in an airtight container for a day or two.
