Air Fryer Chile Rellenos

Ingredients:

  • 4 large poblano peppers
  • 1 cup shredded cheese (like Monterey Jack or cheddar)
  • 1/2 cup all-purpose flour
  • 2 eggs
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Cooking spray or oil for greasing

Optional Filling Ideas:

  • Cooked ground beef or shredded chicken
  • Sauteed onions and garlic
  • Chopped fresh cilantro
  • Diced tomatoes

Instructions:

  1. Preheat your air fryer to 375°F (190°C) for about 3-5 minutes.
  2. Wash the poblano peppers and pat them dry. Use a knife to make a slit lengthwise on each pepper, then carefully remove the seeds and membranes without tearing the pepper.
  3. Stuff each poblano pepper with shredded cheese and any optional fillings you desire.
  4. In a shallow bowl, whisk together the eggs with salt and black pepper.
  5. Place the all-purpose flour in another shallow bowl.
  6. Dip each stuffed poblano pepper first in the flour, coating it evenly, then dip it in the egg mixture, ensuring it’s well coated.
  7. Lightly grease the air fryer basket with cooking spray or oil.
  8. Place the coated poblano peppers in the air fryer basket, making sure they are not touching each other.
  9. Air fry the chile rellenos at 375°F (190°C) for about 15 minutes, or until they are golden brown and the cheese is melted and bubbly.
  10. Once done, carefully remove the chile rellenos from the air fryer using tongs or a spatula.
  11. Serve the air fryer chile rellenos hot, garnished with chopped cilantro and accompanied by your favorite salsa or sauce.
