Ingredients:

For the Steak Marinade:

  • 1 pound (about 450g) flank steak, skirt steak, or sirloin steak, thinly sliced
  • 2 tablespoons olive oil
  • 2 tablespoons lime juice
  • 2 cloves garlic, minced
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste

For the Fajita Vegetables:

  • 1 large bell pepper, thinly sliced
  • 1 large onion, thinly sliced
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste

For Serving:

  • 8 small flour tortillas
  • Optional toppings: shredded cheese, sour cream, guacamole, salsa, chopped cilantro, lime wedges

Instructions:

  1. Marinate the Steak:
    • In a bowl, combine the thinly sliced steak with olive oil, lime juice, minced garlic, chili powder, cumin, paprika, salt, and pepper. Mix well to coat the steak evenly.
    • Cover the bowl and marinate the steak in the refrigerator for at least 30 minutes to 1 hour to allow the flavors to infuse.
  2. Prepare Fajita Vegetables:
    • In a separate bowl, toss the sliced bell pepper and onion with olive oil, chili powder, cumin, salt, and pepper until coated.
  3. Preheat Air Fryer: Preheat your air fryer to 400°F (200°C) for about 5 minutes.
  4. Cook Steak and Vegetables:
    • Place the marinated steak in the air fryer basket in a single layer. You may need to cook in batches depending on the size of your air fryer.
    • Add the seasoned bell pepper and onion mixture to the air fryer basket alongside the steak.
    • Air fry the steak and vegetables at 400°F (200°C) for 10-12 minutes, shaking the basket halfway through cooking, until the steak is cooked to your desired doneness and the vegetables are tender and slightly charred.
  5. Warm Tortillas:
    • While the steak and vegetables are cooking, wrap the flour tortillas in aluminum foil and place them in the air fryer for the last 3-4 minutes of cooking time to warm them.
  6. Assemble Fajitas:
    • Once cooked, remove the steak and vegetables from the air fryer.
    • Divide the steak and vegetables among the warmed tortillas.
    • Serve the air fryer steak fajitas hot with your choice of toppings such as shredded cheese, sour cream, guacamole, salsa, chopped cilantro, and lime wedges.

Note: Cooking times may vary depending on the thickness of the steak slices and your air fryer model. Adjust cooking time accordingly for desired doneness of the steak.

Enjoy your flavorful and tender air fryer steak fajitas for a delicious Tex-Mex meal!
