Air Fryer Fried Rice with Chicken and Veggies

  • 2 cups cooked rice (preferably day-old, chilled rice)
  • 1 boneless, skinless chicken breast, diced
  • 1 cup mixed vegetables (such as peas, carrots, corn, and bell peppers)
  • 2 eggs, beaten
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce (optional)
  • 1 tablespoon sesame oil
  • 2 tablespoons vegetable oil
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Green onions, chopped (for garnish)
  • Sesame seeds (for garnish)


  1. Preheat Air Fryer: Preheat your air fryer to 370°F (187°C) for about 5 minutes.
  2. Cook Chicken and Veggies:
    • In a bowl, season the diced chicken breast with salt and pepper.
    • Add 1 tablespoon of vegetable oil to the air fryer basket and place the seasoned chicken in a single layer. Air fry at 370°F (187°C) for 8-10 minutes or until the chicken is cooked through and lightly browned.
    • Remove the chicken from the air fryer and set it aside.
    • In the same air fryer basket, add the mixed vegetables and air fry for 5-6 minutes or until they are tender-crisp. Remove the vegetables and set them aside with the chicken.
  3. Cook Eggs and Rice:
    • In a separate bowl, beat the eggs with a pinch of salt and pepper.
    • Add the remaining tablespoon of vegetable oil to the air fryer basket. Pour in the beaten eggs and scramble them until cooked through, breaking them into small pieces as they cook.
    • Add the minced garlic to the eggs and continue cooking for another minute.
    • Add the cooked rice to the air fryer basket with the eggs and garlic. Drizzle soy sauce, oyster sauce (if using), and sesame oil over the rice. Stir well to combine.
  4. Combine Ingredients:
    • Add the cooked chicken and vegetables back into the air fryer basket with the rice and egg mixture. Stir everything together until well combined.
  5. Air Fry Fried Rice:
    • Air fry the combined ingredients at 370°F (187°C) for an additional 5-6 minutes, stirring halfway through cooking, until the fried rice is heated through and slightly crispy.
  6. Garnish and Serve:
    • Once cooked, remove the air fryer fried rice with chicken and veggies from the air fryer basket.
    • Garnish with chopped green onions and sesame seeds before serving.

Note: Cooking times may vary slightly depending on the size and model of your air fryer. Adjust cooking time accordingly for desired texture and doneness of the fried rice.
