Homemade sausage rolls are a delicious and versatile snack or appetizer. Here’s a simple recipe for making them:


For the Sausage Filling:

  • 1 pound (450g) ground pork sausage (or a mix of pork and beef)
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried sage
  • 1 teaspoon dried thyme
  • Salt and pepper to taste

For the Pastry:

  • 1 package (17.3 oz) puff pastry sheets, thawed if frozen
  • Flour (for dusting)

For the Egg Wash:

  • 1 large egg, beaten
  • 1 tablespoon milk


  1. Preheat Oven:
    • Preheat your oven to 400°F (200°C).
  2. Prepare Sausage Filling:
    • In a skillet over medium heat, cook the chopped onion until softened. Add minced garlic and cook for an additional minute. Add ground sausage, sage, thyme, salt, and pepper. Cook until the sausage is browned, breaking it up with a spoon. Allow the mixture to cool.
  3. Roll Out Pastry:
    • On a lightly floured surface, roll out the puff pastry sheets into rectangles. If using a package with two sheets, you can cut each sheet in half.
  4. Fill and Shape:
    • Spoon the cooled sausage mixture along the center of each pastry rectangle. Roll the pastry over the filling, sealing the edges. Place the rolls seam-side down.
  5. Cut into Portions:
    • Cut each long roll into smaller portions, depending on your preferred size. Place them on a baking sheet lined with parchment paper.
  6. Make Egg Wash:
    • In a small bowl, whisk together the beaten egg and milk to create an egg wash.
  7. Brush with Egg Wash:
    • Brush the tops of the sausage rolls with the egg wash. This will give them a golden and shiny finish when baked.
  8. Bake:
    • Bake in the preheated oven for 20-25 minutes or until the pastry is puffed and golden brown.
  9. Cool and Serve:
    • Allow the sausage rolls to cool slightly before serving. They can be enjoyed warm or at room temperature.
  10. Optional: Sauce for Dipping:
    • Serve with your favorite dipping sauce, such as ketchup, mustard, or a savory chutney.
