Ingredients:

  • 2 cups cooked and cooled rice (day-old rice works best)
  • 1 cup cooked chicken breast, diced
  • 1 cup mixed vegetables (peas, carrots, corn, and diced bell peppers work well)
  • 2 eggs, beaten
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon vegetable oil
  • 3 green onions, chopped
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Sesame seeds and chopped cilantro for garnish (optional)

Instructions:

  1. Preheat the Air Fryer:
    • Preheat your air fryer to 360°F (180°C).
  2. Prepare Ingredients:
    • Ensure that all ingredients are prepared and ready to go, as stir-frying in the air fryer is a quick process.
  3. Stir-Fry Veggies and Chicken:
    • In a bowl, toss the diced chicken and mixed vegetables with vegetable oil. Place them in the air fryer basket and cook for about 5 minutes, shaking the basket occasionally for even cooking.
  4. Push Ingredients to the Side:
    • Push the partially cooked chicken and veggies to one side of the air fryer basket.
  5. Cook Beaten Eggs:
    • Pour the beaten eggs into the other side of the basket. Allow them to cook for about 1-2 minutes, stirring occasionally until scrambled.
  6. Combine Ingredients:
    • Mix the scrambled eggs with the chicken and veggies in the air fryer basket.
  7. Add Rice:
    • Add the cooked and cooled rice to the air fryer basket. Stir well to combine all the ingredients.
  8. Season with Sauces:
    • Drizzle soy sauce, oyster sauce, and sesame oil over the rice mixture. Stir to evenly coat the ingredients.
  9. Add Aromatics:
    • Add minced garlic and chopped green onions. Stir again to distribute the flavors.
  10. Air Fry:
