  • 1 lb ground beef (or turkey/chicken)
  • 1 packet taco seasoning
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup corn kernels (fresh, frozen, or canned)
  • 1 cup diced bell peppers (any color)
  • 1 cup diced onions
  • 1 can (8 oz) tomato sauce
  • 1 can (10 oz) diced tomatoes with green chilies, undrained
  • 1 can (16.3 oz) refrigerated biscuits (like Pillsbury Grands)
  • 2 cups shredded Mexican blend cheese
  • Optional toppings: chopped green onions, diced tomatoes, sliced olives, sour cream, salsa, etc.


  1. Preheat your oven to the temperature specified on the biscuit package.
  2. In a large skillet, brown the ground beef over medium heat. Drain any excess fat.
  3. Add the taco seasoning to the ground beef according to the package instructions. Stir in the black beans, corn, bell peppers, onions, tomato sauce, and diced tomatoes with green chilies. Mix well and let it simmer for a few minutes.
  4. Cut each biscuit into quarters.
