Crustless quiche

Making a crustless quiche is a great option if you want to reduce the overall carb content of the dish. Here’s a basic recipe for a crustless quiche that you can customize with your favorite ingredients:

Ingredients:

  • 1 tablespoon olive oil or cooking spray
  • 1 onion, finely chopped
  • 1 bell pepper, diced
  • 1 cup spinach, chopped (fresh or frozen, thawed and drained)
  • 1 cup cooked ham or bacon, diced
  • 1 cup shredded cheese (cheddar, Swiss, or your choice)
  • 6 large eggs
  • 1 cup milk (whole milk, skim milk, or a milk alternative)
  • Salt and pepper to taste
  • 1/2 teaspoon dried thyme or your favorite herbs (optional)

Instructions:

  1. Preheat Oven:
    • Preheat your oven to 375°F (190°C). Grease a pie dish with olive oil or use cooking spray.
  2. Sauté Vegetables:
    • In a skillet, heat olive oil over medium heat. Sauté the chopped onion and bell pepper until softened.
  3. Prepare Fillings:
    • Add the chopped spinach and cooked ham or bacon to the skillet. Cook for an additional 2-3 minutes until the spinach wilts.
  4. Assemble Quiche:
    • Spread the sautéed vegetables and meats evenly in the greased pie dish. Sprinkle shredded cheese over the top.
  5. Whisk Eggs and Milk:
    • In a bowl, whisk together the eggs, milk, salt, pepper, and dried thyme (if using).
  6. Pour Egg Mixture:
    • Pour the egg mixture over the vegetables, meat, and cheese in the pie dish.
  7. Bake:
    • Place the pie dish in the preheated oven and bake for approximately 30-35 minutes or until the quiche is set and the top is golden brown.
  8. Cool and Serve:
    • Allow the crustless quiche to cool for a few minutes before slicing. Serve warm.
