Air fryer carrot muffins

Ingredients:

  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/2 cup grated carrots
  • 1/4 cup vegetable oil or melted butter
  • 1/4 cup milk (you can use almond milk or any other milk alternative)
  • 1 large egg
  • 1 teaspoon vanilla extract
  • Optional: Chopped nuts or raisins for topping

Instructions:

  1. Preheat your air fryer to 350°F (175°C) for about 5 minutes.
  2. In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, salt, ground cinnamon, and ground nutmeg.
  3. In a separate bowl, combine the grated carrots, vegetable oil or melted butter, milk, egg, and vanilla extract. Mix well until everything is evenly combined.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix; a few lumps are okay.
  5. Line muffin cups with paper liners or lightly grease the muffin cups if you’re using a silicone mold.
  6. Spoon the muffin batter into the prepared muffin cups, filling each cup about 3/4 full.
  7. Optional: Sprinkle chopped nuts or raisins on top of the muffins for added texture and flavor.
  8. Place the muffin tray in the preheated air fryer basket. You may need to cook in batches depending on the size of your air fryer.
  9. Air fry the carrot muffins at 350°F (175°C) for about 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  10. Once done, carefully remove the muffins from the air fryer and transfer them to a wire rack to cool completely.
  11. Serve the air fryer carrot muffins warm or at room temperature. Enjoy as a delicious breakfast or snack.

Note: Cooking times may vary slightly depending on the size and type of your air fryer. Keep an eye on the muffins towards the end of cooking to prevent over-browning.
