Preparation Time: 15 minutes
Cooking Time: 18-20 minutes
Total Time: 33-35 minutes
Recipe Intensity: Easy
Ingredients:
- 1 cup all-purpose flour
- 1/2 cup granulated sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/2 cup grated carrots
- 1/4 cup vegetable oil or melted butter
- 1/4 cup milk (you can use almond milk or any other milk alternative)
- 1 large egg
- 1 teaspoon vanilla extract
- Optional: Chopped nuts or raisins for topping
Instructions:
- Preheat your air fryer to 350°F (175°C) for about 5 minutes.
- In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, salt, ground cinnamon, and ground nutmeg.
- In a separate bowl, combine the grated carrots, vegetable oil or melted butter, milk, egg, and vanilla extract. Mix well until everything is evenly combined.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix; a few lumps are okay.
- Line muffin cups with paper liners or lightly grease the muffin cups if you’re using a silicone mold.
- Spoon the muffin batter into the prepared muffin cups, filling each cup about 3/4 full.
- Optional: Sprinkle chopped nuts or raisins on top of the muffins for added texture and flavor.
- Place the muffin tray in the preheated air fryer basket. You may need to cook in batches depending on the size of your air fryer.
- Air fry the carrot muffins at 350°F (175°C) for about 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
- Once done, carefully remove the muffins from the air fryer and transfer them to a wire rack to cool completely.
- Serve the air fryer carrot muffins warm or at room temperature. Enjoy as a delicious breakfast or snack.
Note: Cooking times may vary slightly depending on the size and type of your air fryer. Keep an eye on the muffins towards the end of cooking to prevent over-browning.
