Pizza Rustica

Pizza Rustica, also known as Easter Pie, is an Italian savory pie traditionally made during the Easter season. It typically features a rich and flavorful filling of various cheeses, cured meats, and eggs. Here’s a basic recipe for Pizza Rustica:

Ingredients:

For the Dough:

  • 3 cups all-purpose flour
  • 1 teaspoon salt
  • 1 cup unsalted butter, chilled and cut into small pieces
  • 2 large eggs
  • 2-4 tablespoons ice water

For the Filling:

  • 1 pound ricotta cheese
  • 1/2 pound fresh mozzarella, diced
  • 1/2 cup grated Pecorino Romano cheese
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup diced provolone cheese
  • 1/2 cup diced cooked ham or prosciutto
  • 1/2 cup cooked and crumbled Italian sausage
  • 4 large eggs
  • Salt and black pepper to taste
  • 1 egg, beaten (for egg wash)

Instructions:

For the Dough:

  1. Prepare the Dough:
    • In a food processor, combine the flour and salt. Add the chilled butter and pulse until the mixture resembles coarse crumbs.
    • Add the eggs and pulse again. Gradually add ice water, one tablespoon at a time, and pulse until the dough comes together.
    • Turn the dough out onto a floured surface, knead it a few times, and form it into a ball. Wrap in plastic wrap and refrigerate for at least 30 minutes.
  2. Preheat Oven:
    • Preheat your oven to 375°F (190°C).
  3. Roll Out Dough:
    • Roll out two-thirds of the chilled dough to fit the bottom of a 9-inch springform pan. Roll the remaining dough for the top crust. Set aside.

For the Filling:

  1. Prepare Filling:
    • In a large bowl, combine ricotta, mozzarella, Pecorino Romano, Parmesan, provolone, ham or prosciutto, sausage, and eggs. Season with salt and black pepper. Mix well.
  2. Assemble Pizza Rustica:
    • Place the rolled-out dough in the bottom of the springform pan. Pour the cheese and meat mixture over the dough.
  3. Add Top Crust:
    • Roll out the remaining dough and place it over the filling. Pinch the edges to seal the pie.
  4. Make Vent Holes:
    • Use a sharp knife to make a few small vent holes in the top crust. This allows steam to escape during baking.
  5. Brush with Egg Wash:
    • Brush the top crust with the beaten egg for a golden finish.
  6. Bake:
    • Bake in the preheated oven for about 50-60 minutes or until the crust is golden brown and the filling is set.
  7. Cool and Serve:
    • Allow the Pizza Rustica to cool for at least 30 minutes before slicing. It can be served warm or at room temperature.
