Air Fryer Chicken Breast and Potatoes

Ingredients:

For the Chicken:

  • 2 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste

For the Potatoes:

  • 2 large potatoes, peeled and cut into wedges
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste

Instructions:

  1. Preheat Air Fryer: Preheat your air fryer to 400°F (200°C) for about 5 minutes.
  2. Prepare Chicken Marinade (Optional): In a bowl, combine the olive oil, minced garlic, paprika, dried thyme, dried rosemary, salt, and pepper. Mix well to create a marinade. Rub the marinade all over the chicken breasts, ensuring they are evenly coated. Marinate for at least 30 minutes in the refrigerator, if time allows.
  3. Prepare Potatoes: In a separate bowl, toss the potato wedges with olive oil, garlic powder, dried rosemary, salt, and pepper until coated.
  4. Air Fry Chicken and Potatoes:
    • Place the marinated chicken breasts and seasoned potato wedges in the air fryer basket, arranging them in a single layer without overcrowding.
    • Air fry at 400°F (200°C) for 25-30 minutes, flipping the chicken halfway through cooking and shaking the basket to ensure even cooking of the potatoes. Cook until the chicken reaches an internal temperature of 165°F (74°C) and the potatoes are golden and crispy.
  5. Rest and Serve: Once cooked, remove the chicken and potatoes from the air fryer. Let the chicken rest for a few minutes before slicing. Serve the air-fried chicken breast and crispy potatoes hot as a complete meal.
  6. Optional Garnish: Garnish the dish with freshly chopped parsley or a sprinkle of grated Parmesan cheese for extra flavor.

Note: Cooking times may vary depending on the thickness of the chicken breasts and potato wedges, as well as your air fryer model. Always use a meat thermometer to check the doneness of the chicken.
