Copycat Olive Garden chicken gnocchi soup

Certainly! Here’s a copycat recipe for Olive Garden’s Chicken Gnocchi Soup:

Ingredients:

  • 1 tablespoon olive oil
  • 1 cup diced onion
  • 1/2 cup diced celery
  • 1/2 cup diced carrot
  • 2 cloves garlic, minced
  • 1/4 cup all-purpose flour
  • 4 cups chicken broth
  • 1 cup whole milk
  • 1 cup half-and-half
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • Salt and pepper to taste
  • 1 cup cooked and shredded chicken breast
  • 1 cup fresh spinach, chopped
  • 1 package (16 ounces) potato gnocchi

Instructions:

  1. In a large pot or Dutch oven, heat the olive oil over medium heat. Add the diced onion, celery, and carrot. Cook until the vegetables are softened, about 5 minutes.
  2. Add the minced garlic and cook for an additional 1-2 minutes until fragrant.
  3. Sprinkle the flour over the vegetables and stir well to coat. Cook for 2-3 minutes to remove the raw taste of the flour.
  4. Slowly pour in the chicken broth while stirring constantly to avoid lumps. Add the whole milk and half-and-half, continuing to stir.
  5. Season the soup with dried thyme, dried parsley, salt, and pepper. Bring the mixture to a simmer and let it cook for about 10-15 minutes until it thickens slightly.
  6. Add the shredded chicken, chopped spinach, and potato gnocchi to the pot. Simmer for an additional 10-15 minutes, or until the gnocchi is cooked through.
  7. Taste and adjust the seasonings as needed. If the soup is too thick, you can add more chicken broth or milk to reach your desired consistency.
  8. Serve the soup hot, and you can garnish it with additional fresh parsley or grated Parmesan cheese if desired.
