gluten free Mac and cheese

Here’s a simple and delicious recipe for gluten-free macaroni and cheese:

  • 8 oz gluten-free elbow macaroni (or any gluten-free pasta of your choice)
  • 2 tablespoons butter
  • 2 tablespoons gluten-free all-purpose flour
  • 2 cups milk (dairy or non-dairy)
  • 2 1/2 cups shredded gluten-free cheese (cheddar, mozzarella, or a blend)
  • Salt and pepper, to taste
  • Optional: 1/2 teaspoon mustard powder or Dijon mustard (for flavor)
  • Optional toppings: gluten-free breadcrumbs or crushed gluten-free crackers

  1. Cook the gluten-free macaroni according to the package instructions. Drain and set aside.
  2. In a large saucepan, melt the butter over medium heat.
  3. Add the gluten-free all-purpose flour to the melted butter and whisk continuously for 1-2 minutes to create a roux.
  4. Gradually pour in the milk while whisking continuously to avoid lumps. Continue to whisk until the mixture thickens.
  5. Add the shredded gluten-free cheese to the sauce, stirring until the cheese is fully melted and the sauce is smooth.
  6. Season the cheese sauce with salt, pepper, and optional mustard powder or Dijon mustard for extra flavor.
  7. Combine the cooked gluten-free macaroni with the cheese sauce, stirring until the pasta is well coated.
  8. If desired, transfer the macaroni and cheese to a baking dish and sprinkle gluten-free breadcrumbs or crushed gluten-free crackers on top.
  9. If using breadcrumbs, you can brown the top by placing the dish under a broiler for a few minutes until golden.
  10. Serve the gluten-free macaroni and cheese hot, and enjoy!
