Cottage Cheese Cookie dough

Cottage cheese can be a unique addition to cookie dough, providing moisture and a slight tanginess. Here’s a simple recipe for cottage cheese cookie dough:

Ingredients:

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 cup cottage cheese, well-drained
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 4 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 cups chocolate chips or chunks

Instructions:

  1. Preheat your oven to 350°F (180°C). Line baking sheets with parchment paper.
  2. In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Add the well-drained cottage cheese and vanilla extract to the creamed mixture. Mix until well combined.
  4. Beat in the eggs one at a time, ensuring each is fully incorporated before adding the next.
  5. In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
  6. Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms.

  8. Drop rounded tablespoons of dough onto the prepared baking sheets, leaving enough space between each cookie.
  9. Bake in the preheated oven for 10-12 minutes or until the edges are golden brown.
  10. Allow the cookies to cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
